It’s the time to take advantage of this season’s star vegetable: butternut squash. Super high in fiber and nutrients (especially beta-carotene which gives the squash its vibrant orange color)— one cup of cubed squash is virtually fat-free and contains just 82 calories. Roast it or make it into soup, this seasonal vegetable is one fall food to eat on a daily basis.
